Pasta made from fire roasted wheat, so called „grano tostato“, derives from an ancient Italian tradition: In southern Italy, following each harvest the fields are scorched with fire to prepare for the next seasons crops. As a gesture, manorial lords allowed local farmers to collect the grains of wheat that remained on their fields after this cleansing process. From these fire-roasted grains, the farmers then made a unique tasting and highly sought after pasta. Inspired by the extraordinary taste of this pasta, we have created a pasta-collection made from durum wheat, which is manually and time-consumingly roasted on wood after the harvest. After this, the pasta is -like all PPURA pastas- made according to traditional methods deriving from the 19th century. The result is a pasta of unique nutty taste and a hint of roast aroma.
