Due to its climate, Italy is home to a large variety of intensely flavoured vegetables and every region has its own delicacies. This pesto combines a selection of the best Italian vegetables: juicy aubergines mingle with fruity bell peppers and aromatic tomatoes whilespicy peperoncini add the finishing touch. As always, all this is done in a small family-business gently and to a large degree by hand.
