It has always been the tradition that Mamma Lina made her olive pesto after the olive harvest, which caused a sensation in our family year after year. According to this recipe this pesto was made as well. For this, we use only handpicked olives from Southern Italy which are known for their fruitiness. The combination with Italian parsley then leads to a fresh touch of the pesto.
