In Italy two obvious opposites have long been known to cause a lot of excitement- spicy rucola and sweet tomatoes. This pesto combines a prime selection of these ingredients: the wild, small-leafed rucola provides a tangy flavour, while the sun-ripened tomatoes add fruitiness and a sweet note. The taste is then perfected by Parmigiano-Reggiano and Apulian almonds. As always, all this is done in a small family-business gently and to a large degree by hand.
