When it comes to our "Pesto ai Pomodori Salentini," we also only work with organic ingredients from the best producing regions. We therefore use only "Pomodori Salentini", from the same family as the San Marzano tomatoes that ripe in the rich soils of the Apulian tableland. Their taste is as unique as the fields they grow on. The exceptional soil and the sunny climate of southern Italy give the tomatoes their wonderful fruity and juicy aroma. For this we gladly accept that Pomodori Salentini have to be picked by hand due to their delicate skins. After a careful selection, the freshly-harvested tomatoes are cut open and then placed on wooden boards to dry in the sun for 3 to 4 days. In our pesto, the tomatoes come together with more high-quality ingredients like extra vergine olive oil and Parmigiano-Reggiano. All this is done in a small family-business gently and to a large degree by hand.

Ingredients (all from organic farming):

Sun-ripened Salentino tomatoes from the Apulian tableland (60%), Extra Vergine olive oil, Parmigiano-Reggiano, garlic, salt and lots of love.

Pesto ai Pomodori Salentini tastes best with:

This pesto is very versatile and can not only be enjoyed with any kind of pasta but also adds that certain something to paninis, rice-dishes, salads, grilled vegetables, meat and even pizza.

Preparation:

To produce one glass of our "Pesto ai Pomodori Salentini" we use about 1kg of tomatoes, resulting in a hearty sauce. That is why we would advise thinning the pesto a little with water or olive oil before consumption. Or just use a trick that our mothers like to use in order to make a sauce lighter: just keep a little of the salted cooking-water and mix it , as well as the pesto and the pasta. This makes a meal just as tasty as in any restaurant.
