Alce Nero Candido fennel is highly aromatic with firm flesh that is not fibrous and features tough, white outer leaves and small leaves on top. It is crunchy and the fresh aniseed flavour makes it perfect for eating raw in a salad or with an oil dip. Available from October to May and from July to August, it’s sourced from Italy.
