We shortened the Italian name for our organic Volanti. Normally they are called "Dischi Volanti", which means "flying saucer". But "Volanti" is easier to pronounce and simply sounds better! Flying saucer! -great for pasta salad -ideal mixture of different sorts of Italian durum wheat -perfect "al dente"-bite -high content of gluten -keep their form after boiling Organic Byodo Volanti, semolina are perfect for sauce dishes, casseroles and noodle salads.
